Buey de Mar Galicia - Cancer Pagurus
It is a crustacean with great consumption in our kitchen and has white, exquisite meat, with a fine and soft texture. The delicate mix of sea and meatiness makes the Brown Crab an exquisite dish simply cooked.
From its front legs, we obtain the tastiest slices and with them, we can try to make a salpicí³n. You can make a changurro, although it is more common to do it with spider crab.

Es un crustáceo con gran consumo en nuestra cocina y posee una carne blanca, exquisita, de Textura fina y suave.
La delicada mezcla de mar y carnosidad hacen del buey un plato exquisito simplemente cocido. De sus patas delanteras obtenemos las tajadas más sabrosas y con ellas podemos probar a hacer un salpicón. Se puede hacer un changurro, aunque es más frecuente hacerlo con centolla.
Brown Crab with its natural filling Once boiled and clean and with all the meat that we have taken out on a plate, we chop it with a knife, into small pieces, but not into puree. We squeeze half a lemon and add it to the sea ox meat and mix well. Then we add a splash of extra virgin olive oil to taste. Use one of very good quality and that has a distinct flavor. Add salt to taste and mix well with a fork. Finally, put the seasoned sea ox meat inside the shell. Place the legs around on a platter and you will have a dish ready for a special dinner.
Buey de mar con su relleno natural.
Una vez hervido y limpio y con toda la carne que hemos ido sacando en un plato,
la troceamos con un cuchillo, en trozos menudos, pero no en puré. Exprimimos el medio limón y lo echamos a la carne del buey de mar y mezclamos bien.
Añadimos después un chorro de aceite de oliva virgen extra al gusto. Utiliza uno de muy buena calidad y que tenga un sabor marcado. Añade sal al gusto y mezcla bien con un tenedor.
Por último, pon esa carne de buey de mar ya aliñada dentro del caparazón. Coloca las patas alrededor en una fuente y ya tendrás un plato listo para una cena especial .
Brown Crab is an animal that is extremely sensitive to temperatures and it is practically impossible to cook it live and not loosing the legs.
To Kill it it is sufficient to first put it in warm fresh water for a minimum of 1 hour, so that it "drowns."
We can also freeze it 2 or 3 hours before cooking it.
Once the animal is already dead, the ideal is to boil it in seawater, but since we do not usually have it on hand, we will use well-salted drinking water, at a rate of 60 g of salt per liter.
The water should be enough to completely cover the crustacean. To calculate the cooking time for this type of seafood, in my house we have always used this formula: for a 500 g piece, 15 minutes from when the water boils, and for each 100 g or larger, 1 minute more. Thus, if we have an 800 g specimen, we will cook it for 18 minutes. If we have 2 sea oxen weighing 800 g in total, we will also cook them for 18 minutes: the water will take longer to boil, but they will cook at the same time.
El buey de mar es un animal extremadamente sensible a las temperaturas y es prácticamente imposible cocerlo en vivo y que quede entero.
Para que no pierda las patas, es sufiuente ponerlo previamente en agua tibia dulce durante un mínimo de 1 hora, para que «se ahogue».
También podemos congelarlo 2 o 3 horas antes de cocerlo.
Una vez el animal ya está muerto, o si partimos de un ejemplar así, lo ideal es hervirlo en agua de mar, pero como no solemos tenerla a mano, utilizaremos agua potable bien salada, a razón de 60 g de sal por cada litro.
El agua debe ser suficiente para cubrir por completo el crustáceo. Para calcular el tiempo de cocción de este tipo de marisco, en mi casa siempre se ha utilizado esta fórmula: para una pieza de 500 g, 15 minutos a partir de que hierva el agua, y cada 100 g a mayores, 1 minuto más. Así, si tenemos un ejemplar de 800 g, lo coceremos durante 18 minutos. Si tenemos 2 bueyes de mar de 800 g en total, también los coceremos durante 18 minutos: el agua tardará más en romper a hervir, pero se cocerán a la vez.
