What are polyphenols and what do they do?
Polyphenols are a large and diverse family of compounds produced by plants. They help plants respond to sunlight, pests and environmental stress, while also contributing to their colour, aroma and taste.
When consumed as part of food, polyphenols interact with the body in complex ways. Research associates polyphenol-rich dietary patterns with antioxidant and anti-inflammatory activity, although their effects depend on the compound, the food matrix, the quantity consumed, individual metabolism and the gut microbiome.
They are not magic molecules working in isolation. Their value is best understood as part of a varied, plant-rich diet. Variety matters more than chasing a single headline ingredient.

Polyphenols occur throughout the plant kingdom. No single food contains every type, so a colourful and varied plate offers more than any isolated “superfood.”

Nutrition is often discussed in numbers, but our senses can offer clues. Polyphenols may contribute bitterness, astringency, colour and complexity: the tannic grip of a walnut, the dark edge of cocoa, the lively bitterness of an artichoke or the persistent warmth of a robust olive oil.
This does not mean every bitter food is rich in polyphenols, or that greater bitterness automatically guarantees a healthier product. But bitterness need not be treated as a defect. When balanced well, it gives food dimension and creates contrast against sweetness, fat, acidity and salt.

Bitterness with a purpose—and a limit
Extra virgin olive oil provides one of the clearest connections between polyphenols and sensory character. Its phenolic compounds help shape bitterness, astringency and the peppery sensation felt in the throat.
Let us say it plainly: many of the phenolic compounds we seek in olive oil are bitter. As their concentration rises, bitterness and pungency generally become more intense, although the exact result depends on which phenols are present—not only on the total number.
Fruitiness, bitterness and pungency are positive attributes in a good oil. Yet positive does not mean that more is always better. Quality also requires harmony, freshness and suitability for the food in front of us.
The real objective is not maximum concentration, but balance: enough phenolic intensity to give the oil freshness, character and potential nutritional value, yet enough harmony and versatility for us to enjoy it regularly.
The best oil is not necessarily the one with the highest number; it is the one that brings both wellbeing and pleasure to the food we actually want to eat.
The European Food Safety Authority recognises a specific claim for olive-oil polyphenols and the protection of blood lipids from oxidative stress, but only when the stipulated amount of hydroxytyrosol and related compounds is supplied. “Extra virgin” alone does not certify a particular polyphenol level, and taste cannot replace laboratory analysis.

The most pleasurable approach is not to find the strongest oil and pour it over everything. Build a small repertoire of extra virgin olive oils and use each where its personality can shine.

Heat, light and oxygen gradually diminish an olive oil’s aromas and phenolic character. Choose a bottle size that suits how quickly you use it, favour dark glass or protected tins, keep it tightly closed and store it in a cool cupboard away from the cooker and direct sunlight.

A richer diet, not a stricter one
Maintaining a diet rich in natural antioxidant and anti-inflammatory compounds does not require joyless rules. It is less about subtraction than abundance: more colours, more plant varieties, more herbs, better fats and foods closer to their recognisable form.
- Dress tomatoes, roasted peppers or pulses with extra virgin olive oil and fresh herbs.
- Add walnuts or almonds for texture and a pleasantly astringent note.
- Use cocoa, cinnamon and fruit to give desserts complexity beyond sweetness.
